we ran out of muffins…

We ran out of muffins.
So I made Spiced French Toast.

With Blueberry and Cherry Cinnamon Compote.

Seriously, the best Saturday morning breakfast we’ve had in a long time, and all thanks to one of my Twitter pals mentioning what she was up to for breakfast….and it just sounded SO good I had to run and make some.

*Sigh*

Here’s the recipe for the compote I made – this would also be amazing served over yogurt, or ice cream…or eaten straight outta the bowl.

Warm Berry Cinnamon Compote

1 cup fresh or frozen berries

1/8-1/4 cup granulated sugar

small dash cinnamon

1/2 teaspoon fresh lemon zest

Heat all ingredients in a small saucepan over medium heat, stirring often, until berries soften and release their juices.  Serve warm, and store any leftovers in the fridge up to about a week.

  1. That looks delicious. We actually had French toast for dinner at some point last week. Had this fabulous multigrain bread from Fresh & Easy, which I needed to use up, and it was just perfect. (And, since it was dinner, I used a no-sugar recipe rather than the family recipe, which uses practically lethal amounts of butter and sugar.) I’m thinking I’ll have to try out the compote now! (Well, not NOW…soon…)

    I started reading your blog thanks to Jaime H. – I work with her. I made this compote over the weekend and used Challah bread for french toast – made sweet and spicy bacon in the oven – gruyere scrambled eggs with asparagus and fresh raspberry mimosas! It was amazing – and SO easy. Thanks for the great recipe
