Easter Offerings

Easter is traditionally a time spent celebrating New Life, the beauty of spring and enjoying the gift of family and friends. For us, it is about all those things, but mostly, we focus on the eating part. Here is why we now weigh 6,000 pounds:

We kicked off the weekend with my family by enjoying Black Bean Soup with Sun-Dried Tomatoes by Mosewood Restaurant Cooks at Home and Il Forneo bread from Trader Joes,

A hazelnut latte at Starbucks on Saturday morning…mmmmmmm, Starbucks!

Of course, egg salad sami’s on toasted whole wheat bread for lunch (we had an early Easter Egg hunt),

Leftover red chili Saturday night so I could focus on baking, baking, and baking for the Next Day,

and now, I give you:

OUR EASTER LUNCH

This was a huge group effort, all The Husband’s Family – 18 of us under one roof!
Honey Baked Ham, Sweet Potatoes, Mashed Potatoes with Corn and Carrots (Mixed in! So good!), Mixed Greens and Herbs Salad with homemade Multigrain Croutons (by yours truly!), Homemade Sweet Dinner Rolls from GiGi (our grandmother), Green Beans with Almonds, and theeeeeeeeennnnnnnnnnnnnnnnn….

the DESSERT:

Strawberry and Kiwi Trifle
Cookies and Cream balls

and what I had so much fun making:

Clotilde’s Melt in Your Mouth Chocolate Cake:
(sorry for the blurriness! the crowd was elbowing me in the stomach to get to this one, and I had to take the flipping picture already and get out of the way or die trying, so this was the best I could do…)

Pound Cake with whipped cream and fresh strawberries mixed with orange zest and a light confectioners sugar glaze, (no pic, sorry…)

Bea’s Chocolate Pralines (in plastic eggs, as I ran out of time to make them so beautiful as Bea did)(and another blurry picture; see reason above):

My very own Coconut Nests with Marscapone, Strawberry and Mango Slices:

And to top it all off, the BEST LEMON DROP. EVER. Shared with good friends I will always be grateful for, Easter and always.

  1. They do look like a little soft, but I’ll bet they still made the perfect foundation for the fruit.

    You really outdid yourself, and so did the family, from the sound of things!! Oh, and feel free to join me and my husband in saying, “Now let the exercising commence!”.

  3. s’kat – yep – they were a little on the soft and sensitive side…next time i would add more macaroon-like ingredients – but very tasy and pretty, i must say!
